What are good recipes using 'lychee' fruit?

Just bought some as they're in season here. They're pretty darn juicy I tell you! Any ideas for 'savory' recipes using this fruit other than a 'dessert' type recipe?What are good recipes using 'lychee' fruit?

Chinese Shrimp Salad


INGREDIENTS


1 (11 ounce) can lychee fruit, drained with juice reserved


1 pound cooked shrimp - peeled and deveined


3 Fuji apples - peeled, cored and cubed


1 tablespoon lemon juice


1/4 cup mayonnaise


DIRECTIONS


In a large bowl, combine lychees, shrimp and apples. Stir in lemon juice and 1/4 cup reserved lychee juice. Let chill for 15 minutes.


Remove from refrigerator and drain liquid. Combine drained liquid with mayonnaise and toss together with fruit. Chill for at least another hour and serve cold.





*It calls for canned lychee, but I don't see why you can't use fresh ones and keep the juice.
I like the shrimp salad idea, and I am thinking curry or thai chili paste or old bay seasoning would work.
LYCHEE FRUIT SALAD





1 c. fresh lychees, or canned, seeded


1 c. papaya, diced


2 med. mangoes, cut into slices


1 c. fresh figs, peeled %26amp; cubed


1 c. yogurt


1 tsp. ginger root, grated


1 tbsp. lemon juice


Chopped macadamia nuts





Place fruit in bowl or on individual salad plates lined with lettuce. Mix yogurt, ginger and lemon juice. Pour dressing over salad just before serving. Sprinkle with macadamia nuts. 6 servings.





STUFFED LYCHEE





2 (20 oz.) cans whole seedless lychee, drained


8 oz. cream cheese, softened


2 1/2 oz. crystalized ginger, finely chopped


Chopped macadamia nuts (garnish)





Combine cream cheese and ginger. Stuff mixture into lychee with small spoon, butter knife or a pastry bag. Chill. Garnish and serve. Makes 3 dozen.








LYCHEE-COCONUT ICE





1 (8 oz.) can lychees


1/4 tsp. almond extract


1 c. crushed ice


2 scoops coconut ice cream


Maraschino cherries


Toasted shredded coconut





Drain lychees, reserving syrup. Add almond extract to syrup. Cut up lychees or puree in blender. Place in bottom of 2 chilled tall glasses. Add 1/2 cup each crushed ice. Pour in reserved lychee syrup. Top with coconut ice cream and garnish with maraschino cherries and toasted coconut. Serve with long spoons for mixing ice cream with fruit and ice. Makes 2 servings.


VARIATION: Combine all ingredients in blender container and blend until slushy. Also macadamia nut ice cream may be substituted for coconut ice cream.
