Anyone know any good fruit parfait recipes? Nothing with pudding though.?

Maybe something similar to the great parfait Olive Garden used to have on their menu.Anyone know any good fruit parfait recipes? Nothing with pudding though.?
Easy Blueberry-Lemon Parfait





INGREDIENTS


2 cups fresh or thawed frozen blueberries


2 (8 ounce) cartons non-fat lemon yogurt


10 gingersnaps, crumbled





DIRECTIONS


In each of four parfait glasses or tall wineglasses, put 1/2 cup blueberries, followed by 1/2 cup yogurt, then crumbled gingersnaps.

YOGHURT CRUNCH PARFAIT





INGREDIENTS


1 (8 ounce) container BREYERS Lowfat Yogurt, any variety


1 (8 ounce) container COOL WHIP FREE Whipped Topping, thawed, divided


1 banana, sliced


1 (20 ounce) can pineapple chunks, drained


1 cup POST SELECTS BANANA NUT CRUNCH Cereal








DIRECTIONS


Stir yogurt and 1/2 of the whipped topping in large bowl until smooth. Alternately layer yogurt mixture, bananas, pineapple chunks, cereal and remaining whipped topping in 6 parfait glasses; repeat layers.Anyone know any good fruit parfait recipes? Nothing with pudding though.?
1 large banana, sliced


1/2 cup fresh strawberries, sliced


1/2 cup pineapples, chopped


2 cups nonfat vanilla yogurt


1/2 cup granola cereal


4 fresh strawberries (to garnish)





Toss fruits in a bowl and toss gentley.


Into each parfait dish, layer 1/4 of fruit mixture, 1 tablespoon granola, 1/4 cup yogurt, 1/4 cup fruit mixture, 1/4 cup yogurt, 1 tablespoon granola and then garnsih with a strawberry.
Olive Garden Restaurants Berries and Zabaione

8 extra large egg yolks


1/4 cup granulated sugar


1/4 cup amaretto or Frangelico liqueur


1 cup whipping cream


4 scoops orange sorbet or sherbet


2 cups fresh strawberries cut in half lengthwise


1 cup fresh blueberries


Instant-read thermometer


4 red wine glasses





Whip egg yolks in the top of a double boiler (upper pan should not touch hot water).





Stir in sugar and liqueur, at about 165 degrees F.





Cool until below 40 degrees F; fold in whipped cream and mix well; set completed zabaione aside.





Place one scoop of orange sorbet or sherbet inside each wine glass.





Add 1/2 cup of fresh strawberries and 1/4 cup of fresh blueberries to each wine glass; top with zabaione.





Serves 4.

Here's how to make a yummy berry parfait:





2 1/2 cups assorted berries (blackberries, blueberries, strawberries and/or raspberries)


2 1/2 tablespoons (25 - 40 grams) granulated white sugar





Place all the berries (cut the strawberries into pieces if they are too large) in a large bowl and sprinkle with the sugar. Stir to combine and leave to macerate for about 30 minutes.





For the cream, beat together, until soft peaks form: 1/2 cup (4 ounces) mascarpone cheese, 1/2 cup heavy whipping cream, 3 tablespoons confectioners (powdered) sugar, and 1/2 teaspoon pure vanilla extract.





Take four wine or parfait glasses and layer the berries with the cream.





You can use any fruit you want in place of all or part of the berries.
