Easy Sherry Trifle

For 6 - 8 people

1 pint milk (16 oz)

1 and a half oz custard powder (Bird's brand can normally be found here in British stores or Sweetbay supermarkets)

2 oz sugar

1 sponge cake or a packet of lady fingers

1 package of jello (red is best)

1 large can fruit cocktail

2 - 3 tablespoons sherry (can delete if necessary)

Dream topping, whipped cream or any dairy topping. (cool whip)

Chocolate shavings.

Cooking time 6-8 minutes.

Make the jello using slightly less water than normal. This will make a firmer finish. Cool slightly but do not let it get cold. I like to add more flavor to my trifle by using the juice from the can of fruit and water rather than just water.

Slice the sponge cake and line the bottom and sides of a dish. Take care to cover all the bottom of the dish and have side slices touching one another.

Pour sherry over the sponge. Add the drained fruit leaving a little for decoration. Next pour the jello over. Put in the refrigerator to set. By using less liquid in the jello it will set even quicker.

Make the custard. On the packet it will give the instructions. You will need the custard powder, milk, and sugar and basically stir them together until it starts to bubble and get thick. Set aside to cool slightly, cover with paper and a plate to prevent skin forming. If you are unable to find Bird's custard you can either make your own from scratch or at a push you could use vanilla pudding. However, the vanilla pudding mix really doesn't give the dessert that special touch.

When the jello is set. Pour custard on the top. Put back in refrigerator until set.

Just before serving add the cream or dairy topping. Spread it thickly over the custard. Finally place the fruit in the middle and decorate with chocolate shavings.
