Mom remembers them as a child and would like some recipes for them, expressly apple and apricot fillings..Recipes for southern fried pies with fruit filling?
FRIED PIES





3 cups all-purpose flour





1 teaspoon salt





3/4 cup shortening





1 large egg, lightly beaten





1/4 cup water





1 teaspoon white vinegar





2 cups fruit filling (see recipes)





Vegetable oil





Sugar (optional)





* Combine flour and salt in a large bowl; cut in shortening with a pastry blender until crumbly.





* Combine egg and water, stirring with a fork; drizzle over flour mixture. Add vinegar, and stir with a fork just until dry ingredients are moistened.Recipes for southern fried pies with fruit filling?

FRIED FRUIT PIES





2 cans (8 oz. size) refrigerated buttermilk or country style biscuits


1 1/3 c. canned cherry, blueberry, pineapple or apple pie filling


Vegetable oil


Confectioners' sugar





Separate biscuit dough into 10 biscuits. Press 2 biscuits together to form a 7 inch circle. Repeat with remaining biscuits.


Place 2 tablespoons fruit filling in center of each. Moisten edge, fold in half, seal edge with fork, prick top.





Pour vegetable oil in heavy skillet to depth of 1/4 inch. Heat slowly to 375 degrees on deep fat thermometer.





Fry pies about 4 minutes on each side, until golden brown. Drain on paper towels; sprinkle with confectioners' sugar. Makes 10 pies.

Try canned biscuits with canned fruit filling. Then, fry them up. Cheap and easy...
My mom used flour tortillas. You can cook dried apples or canned apple pie filling. Just put a tablespoon or two into the middle of the tortilla, fold over 1/3, then fold over the other 1/3 and use a wooden toothpick to hold it closed. Fry it in oil until browned, place on paper towel to drain and then cover with margarine. Absolutely delicious!
